I love a good muffin. Theres something very comforting about that cakey goodness that just fills my being with glee and matched with a cup of tea its the perfect breakfast treat.
I’ve made blueberry muffins a few times before but this time I wanted to do a vegan, vaguely healthy version that I could bring into work for breakfast. This recipe is very much inspired by different recipes I’ve read over the years and I was pleasantly suprised by how well they turned out!
- Freshly squeezed juice of a lime (and the bits)
- 3 bananas
- 2 heaped tablespoons of coconut yoghurt
- 2 teaspoons of baking powder.
- A cup of spelt flour.
- Half a cup of brown sugar.
- Freshly washed blueberries.
Mash bananas and add lime juice, stir and add baking powder, stir again and add yoghurt. Stir again and add the sugar. Mix all those ingredients together and add spelt flour add more if needed. Add a pinch cinammon if desired then add the blueberries. Mix in the blueberries.
Carefully put the mixture into muffin cups and sprinkle the tops with alittle brown sugar. Put the muffins into the oven on gas mark 5 and bake for about 20 minutes or until are golden brown. Take out of the oven and leave to cool. Then try your best not to eat the whole lot!
